If you're looking to make a minor change or amendment to a contract, then typically, it's ok to do so via email. However, suppose you're looking to make more significant changes that could affect the agreement's general terms. In that case, it's probably best to put those changes in writing (either by email or creating a new contract) and have both parties sign off on them.
