Can a person have two different wills in two different countries governing the assets held in each country? I have some property in South Africa, while I'm living in the UK.

It is better to make one and getting it registered wherever you reside.

Yes, if a person has assets in foreign countries then he/she can have concurrent wills and such wills are legally valid. However, you must follow the respective country's law.

In the event of Registration of a WILL is compulsory then you have to make sure that the WILL is acceptable in UK under UK Registration Act and Transfer of Properties Act. Thanking you. It would be better to have one will to cover all properties.
